                        Chicken Korma is a popular Indian dish known for its rich, creamy, and aromatic sauce. It is typically made with tender chicken pieces cooked in a flavorful blend of spices, yogurt, and cream. Here's a recipe for Chicken Korma:

Ingredients:

1.5 pounds (700g) chicken, cut into pieces

2 tablespoons ghee or oil

1 large onion, finely chopped

2 teaspoons ginger-garlic paste

2 tomatoes, pureed

1/2 cup plain yogurt

1/4 cup heavy cream

1 teaspoon turmeric powder

1 teaspoon red chili powder

1 teaspoon coriander powder

1 teaspoon cumin powder

1 teaspoon garam masala

1 cinnamon stick

4 cloves

4 green cardamom pods

2 bay leaves

Salt to taste

Fresh cilantro leaves, chopped (for garnish)

Instructions:

In a large pan or skillet, heat the ghee or oil over medium heat. Add the chopped onions and sauté until they turn golden brown.

Add the ginger-garlic paste and sauté for another minute until the raw smell disappears.

Add the pureed tomatoes and cook for 2-3 minutes until the oil separates from the mixture.

In a small bowl, whisk the yogurt until smooth. Add the yogurt to the pan and mix well with the onion and tomato mixture.

Add the turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, cinnamon stick, cloves, green cardamom pods, and bay leaves. Mix well and cook for 2 minutes to release the flavors.

Add the chicken pieces to the pan and coat them well with the spice mixture. Cook for 5-7 minutes until the chicken is lightly browned.

Reduce the heat to low, cover the pan, and let the chicken simmer for about 20-25 minutes or until it is cooked through and tender. Stir occasionally.

Once the chicken is cooked, stir in the heavy cream and simmer for an additional 2-3 minutes.

Adjust the salt according to taste.

Garnish with fresh cilantro leaves.

Serve the Chicken Korma hot with naan, roti, or rice.
