Dim Sum Recipe



Recipe for making classic shrimp dumplings, also known as Har gow, a popular dim sum dish:

Ingredients:

For the dough:

1 ½ cups wheat starch

½ cup tapioca starch

1 cup boiling water

2 tablespoons vegetable oil

For the filling:

1 pound shrimp peeled and deveined.

1 tablespoon cornstarch

1 tablespoon soy sauce

1 tablespoon oyster sauce

1 teaspoon sesame oil

1 teaspoon sugar

¼ teaspoon white pepper

2 green onions finely chopped.

1 teaspoon grated ginger

1 clove garlic, minced.

Pinch of salt

Instructions:

In a large mixing bowl, combine the wheat starch and tapioca starch. Gradually add the boiling water while stirring continuously until a dough forms.

Add the vegetable oil and knead the dough until it becomes smooth and pliable. Cover the dough with a damp cloth and let it rest for 30 minutes.

Meanwhile, prepare the filling. Finely chop the shrimp into small pieces and place them in a bowl.

In a separate small bowl, combine the cornstarch, soy sauce, oyster sauce, sesame oil, sugar, white pepper, grated ginger, minced garlic, chopped green onions, and a pinch of salt. Mix well.

Pour the sauce mixture over the chopped shrimp and mix until the shrimp is well coated.

Take a small portion of the dough and roll it into a thin circle, about 3 inches in diameter.

Place a spoonful of the shrimp filling in the center of the dough circle.

Fold the edges of the dough towards the center, pleating it to seal the filling. Pinch the top to close the dumpling, leaving the filling exposed.

Repeat the process with the remaining dough and filling.

Steam the dumplings in a steamer basket lined with parchment paper for about 8-10 minutes, or until the dough turns translucent and the shrimp filling is cooked through.

Carefully remove the steamed dumplings from the steamer and serve hot.

You can serve the shrimp dumplings with soy sauce, chili oil, or a dipping sauce of your choice.

Note: You can also add other fillings to your dim sum, such as ground pork, mushrooms, or vegetables, for a variety of flavors.
