Ingredients:

2 large potatoes, peeled and sliced into medium-thick rounds

1 cup gram flour (besan)

1/4 cup rice flour (optional, for extra crispiness)

1 teaspoon red chili powder (adjust to taste)

1/2 teaspoon turmeric powder

1 teaspoon cumin seeds

A pinch of asafoetida (hing)

Salt to taste

Water, as needed, for the batter

Oil for deep-frying

Instructions:

In a mixing bowl, combine gram flour, rice flour (if using), red chili powder, turmeric powder, cumin seeds, asafetida, and salt. Mix well.

Gradually add water to the dry ingredients and whisk to make a smooth and thick batter. The batter should be thick enough to coat the potato slices.

Heat oil for deep-frying in a pan or kadai over medium heat.

Dip each potato slice into the batter, ensuring it is well-coated on all sides. Gently shake off any excess batter.

Carefully drop the coated potato slices into the hot oil, one by one. Fry them in small batches to ensure they cook evenly.

Fry the potato slices until they turn golden brown and crispy, flipping them occasionally for even frying. This may take around 4-5 minutes per batch.

Remove the fried potato slices with a slotted spoon and drain them on a paper towel to remove excess oil.

Repeat the process with the remaining potato slices and batter.

Serve the hot and crispy Aloo Bajji immediately as a snack or appetizer.

Aloo Bajji is often enjoyed with mint chutney, tamarind chutney, or tomato ketchup. You can also sprinkle some chaat masala or lemon juice on top for added flavor.
