Ras Malai Recipe

         Ras Malai is a popular Indian dessert made with soft cottage cheese dumplings (called rasgulla) soaked in a rich and creamy milk syrup flavored with cardamom and saffron. It is a delightful and indulgent treat that is often served during festivals and special occasions. Here's a recipe to make Ras Malai:

Ingredients:

For the Ragula (Cottage Cheese Dumplings):

4 cups full-fat milk

2 tablespoons lemon juice or vinegar

1 cup sugar

4 cups water

For the Ras Malai Milk Syrup:

4 cups full-fat milk

1 cup sugar

A pinch of saffron strands

½ teaspoon cardamom powder

Chopped nuts (such as pistachios or almonds) for garnish.

Instructions:

Making the Rasgullas (Cottage Cheese Dumplings):

In a large pot, bring the milk to a boil.

Reduce the heat to low and add lemon juice or vinegar gradually while stirring. The milk will curdle, and the whey will separate from the solids (cottage cheese).

Turn off the heat and let it sit for a couple of minutes.

Strain the curdled milk through a cheesecloth or a fine-mesh sieve.

Rinse the collected cottage cheese under running water to remove the lemon juice or vinegar flavor.

Tie the cheesecloth with the cottage cheese and hang it for about 30 minutes to drain excess water. This process will help in obtaining a firm texture for the dumplings.

After draining, knead the cottage cheese for a few minutes until it becomes smooth and pliable.

Divide the cottage cheese into small portions and shape them into smooth balls (dumplings).

Cooking the Ragula:

In a large pot, combine sugar and water and bring it to a boil.

Gently drop the cottage cheese balls (dumplings) into the boiling sugar syrup.

Cover the pot and let the dumplings cook on medium heat for about 15-20 minutes until they double in size and become soft and spongy.

Remove the pot from the heat and let the dumplings cool in the syrup for a few minutes.

Preparing the Ras Malai Milk Syrup:

In a separate wide pan, bring the milk to a boil.

Reduce the heat to low and let the milk simmer for about 20-25 minutes, stirring occasionally, until it reduces to approximately half its original quantity.

Add sugar, saffron strands, and cardamom powder to the simmering milk. Stir well to dissolve the sugar and infuse the flavors.

Turn off the heat and let the milk syrup cool to room temperature.

Assembling Ras Malai:

Gently squeeze the cooked rasgullas (cottage cheese dumplings) to remove excess syrup and transfer them to a serving dish.

Pour the cooled milk syrup (prepared in step 3) over the rasgullas, ensuring they are well soaked.

Refrigerate the Ras Malai for a few hours to allow the flavors to meld and the dumplings to absorb the milk syrup.

Serving Ras Malai:

Garnish the Ras Malai with chopped nuts (like pistachios or almonds).

Serve it chilled and enjoy the creamy and aromatic dessert.
