Vada Recipe

Medu vada is a popular South Indian snack made from urad dal (split black gram). It is a deep-fried savory fritter that is crispy on the outside and soft on the inside. Here's a recipe to make Medu vada:

Ingredients:

1 cup urad dal (split black gram)

2 tablespoons rice flour

1 small onion, finely chopped

2 green chilies, finely chopped

1 teaspoon ginger, grated

1 tablespoon chopped fresh coriander leaves

A few curry leaves, chopped

Salt to taste

Oil for deep frying

Instructions:

Wash the urad dal under running water and soak it in water for about 4-5 hours.

Drain the soaked urad dal and transfer it to a blender or food processor. Grind it to a smooth batter, adding a little water as needed. The batter should be thick and fluffy.

Transfer the batter to a large mixing bowl. Add rice flour and salt. Mix well to incorporate the ingredients.

Add chopped onions, green chilies, grated ginger, chopped coriander leaves, and curry leaves to the batter. Mix well to combine all the ingredients evenly.

Heat oil in a deep pan or kadai over medium heat for deep frying.

Wet your hands with water and take a small portion of the batter. Shape it into a round ball and flatten it slightly to form a vada shape. Make a hole in the center with your thumb.

Gently slide the shaped vada into the hot oil. You can fry multiple vadas at a time, depending on the size of your pan.

Fry the vadas on medium heat until they turn golden brown and crispy on both sides. Flip them occasionally to ensure even frying.

Once the vadas are cooked, remove them from the oil using a slotted spoon and drain excess oil on a paper towel.

Repeat the process with the remaining batter to make more vadas.

Medu vadas are typically served with coconut chutney and sambar. They can be enjoyed as a breakfast dish or as a snack with a hot cup of tea or coffee. The crispy exterior and soft interior make them a delightful treat.
