Cornish Pasty Recipe

  Recipe for the perfect traditional Cornish pasty


Ingredients:

For the pastry:

2 ½ cups all-purpose flour

½ teaspoon salt

½ cup unsalted butter, cold and cut into small cubes

½ cup cold water

For the filling:

1 pound beef skirt steak, diced into small cubes.

1 large potato, peeled and diced into small cubes.

1 small onion finely chopped.

1 small rutabaga (swede), peeled and diced into small cubes.

1 tablespoon fresh parsley, chopped.

Salt and pepper to taste

2 tablespoons butter

Instructions:

For the pastry:

In a large mixing bowl, combine the flour and salt. Add the cold butter cubes and rub them into the flour using your fingertips until the mixture resembles breadcrumbs.

Gradually add the cold water, a little at a time, and mix until the dough comes together. Form the dough into a ball, cover it with plastic wrap, and refrigerate for at least 30 minutes.

For the filling:

In a bowl, combine the diced beef, potato, onion, rutabaga, and chopped parsley. Season with salt and pepper to taste.

Preheat the oven to 400°F (200°C).

On a lightly floured surface, roll out the pastry dough to about ⅛-inch thickness. Cut out circles, approximately 7-8 inches in diameter.

Place a spoonful of the filling mixture on one half of each pastry circle, leaving a border around the edges.

Dot the filling with small pieces of butter.

Fold the other half of the pastry circle over the filling, creating a half-moon shape. Press the edges firmly to seal.

Crimp the edges of the pasties using your fingers or a fork to create a decorative seal.

Place the pasties on a baking sheet lined with parchment paper.

Cut a small slit on the top of each pasty to allow steam to escape.

Bake in the preheated oven for 10 minutes. Then reduce the oven temperature to 350°F (180°C) and continue baking for another 35-40 minutes, or until the pasties are golden brown.

Remove from the oven and let them cool for a few minutes before serving.

The traditional Cornish pasty is a delicious handheld meal. Enjoy it warm as a snack or as a main course accompanied by a fresh salad. The combination of the flaky pastry and flavorful filling is sure to satisfy your taste buds!
