Pongal Recipe

         Pongal is a popular South Indian dish made with rice and lentils, cooked together and seasoned with spices. It is a savory dish often enjoyed for breakfast or lunch. Here's a recipe to make Pongal:

Ingredients:

1 cup raw rice

1/4 cup split yellow moong dal (lentils)

3 cups water

2 tablespoons ghee (clarified butter)

1 teaspoon cumin seeds

1 teaspoon black peppercorns

1 inch ginger, grated

A few curry leaves

1/4 teaspoon asafoetida (hing)

1/4 cup cashew nuts

Salt to taste

Instructions:

Rinse the rice and moong dal together under running water until the water runs clear. Drain the water and set aside.

In a pressure cooker or a large pot, add the rinsed rice and moong dal along with 3 cups of water. Close the pressure cooker or cover the pot with a lid.

If using a pressure cooker, cook on medium heat for 3-4 whistles or until the rice and lentils are well cooked and soft. If using a pot, cook on medium heat until the rice and lentils are fully cooked and mushy. Set aside.

In a separate pan, heat ghee over medium heat. Add cumin seeds, black peppercorns, grated ginger, curry leaves, and asafoetida. Sauté for a minute until the spices release their aroma.

Add cashew nuts to the pan and fry them until they turn golden brown. Remove them from the pan and set aside.

Pour the tempered spices and ghee mixture over the cooked rice and lentils. Add salt to taste.

Mix well to combine all the ingredients, mashing the rice and lentils slightly as you stir.

Adjust the consistency by adding a little hot water if needed. Pongal should have a soft and slightly mushy texture.

Garnish with the fried cashew nuts and additional ghee if desired.

Serve the Pongal hot with coconut chutney, sambar (lentil soup), or a side of your choice.
