Puri with Aloo Recipe

 Recipe for Puri with Aloo (Potato) Curry


Ingredients:

For Puri:

2 cups whole wheat flour

1/2 teaspoon salt

Water for kneading

Oil for deep frying

For Aloo (Potato) Curry:

4 medium-sized potatoes boiled and peeled.

1 onion finely chopped.

2 tomatoes finely chopped.

2 green chilies, slit.

1 teaspoon ginger-garlic paste.

1/2 teaspoon turmeric powder

1 teaspoon red chili powder

1 teaspoon cumin powder

1 teaspoon coriander powder

1/2 teaspoon garam masala powder

Salt to taste

Fresh coriander leaves, chopped (for garnishing)

Oil for cooking

Instructions:

For Puri:

In a mixing bowl, combine whole wheat flour and salt.

Gradually add water and knead to form a smooth and pliable dough.

Cover the dough with a damp cloth and let it rest for 15-20 minutes.

Divide the dough into small portions and roll each portion into a small round circle.

Heat oil in a deep-frying pan or kadai over medium heat.

Carefully slide one rolled puri into the hot oil and press it gently with a slotted spoon to help it puff up.

Fry the puri until it turns golden brown on both sides. Remove it from the oil and place it on a paper towel to drain excess oil.

Repeat the process with the remaining dough portions to make more puris.

Serve the puris hot with aloo curry.

For Aloo (Potato) Curry:

Heat oil in a pan over medium heat.

Add chopped onions and sauté until they turn golden brown.

Add ginger-garlic paste and slit green chilies. Sauté for a minute until the raw smell disappears.

Add chopped tomatoes and cook until they turn soft and mushy.

Mash the boiled and peeled potatoes and add them to the pan. Mix well with the onion-tomato mixture.

Add turmeric powder, red chili powder, cumin powder, coriander powder, garam masala powder, and salt. Mix well to coat the potatoes with the spices.

Cook the aloo curry on low heat for about 5-7 minutes, allowing the flavors to meld together. If the curry appears dry, you can add a little water to adjust the consistency.

Garnish with freshly chopped coriander leaves.

Serve the hot and flavorful aloo curry with puris.
