Ricotta Kunafa Recipe

     Ricotta Kunafa Roll is a delicious and indulgent Middle Eastern dessert made with layers of crispy kunafa pastry and a creamy ricotta cheese filling. It is typically soaked in a sweet sugar syrup and flavored with rose or orange blossom water. Here's a recipe to make Ricotta Kunafa Roll:

Ingredients:

For the Kunafa:

250 grams kunafa dough (shredded phyllo dough)

1 cup unsalted butter, melted

For the Ricotta Filling:

500 grams ricotta cheese

1/2 cup granulated sugar

1 teaspoon rose water or orange blossom water

For the Sugar Syrup:

1 cup granulated sugar

1 cup water

1 tablespoon lemon juice

1 teaspoon rose water or orange blossom water

Instructions:

Preheat your oven to 180°C (350°F). Grease a rectangular baking dish with butter or cooking spray.

In a large bowl, combine the ricotta cheese, sugar, and rose water or orange blossom water. Mix well until the sugar is dissolved and the mixture is creamy. Set aside.


Place the kunafa dough in a large bowl and separate the strands with your hands to loosen them.

Pour the melted butter over the kunafa dough and mix well, ensuring that all the strands are coated with butter.

Take half of the butter-coated kunafa dough and spread it evenly on the bottom of the greased baking dish. Press it down gently to form a compact layer.

Spread the ricotta filling evenly over the kunafa layer, leaving a small border around the edges.

Cover the ricotta filling with the remaining butter-coated kunafa dough, pressing it down gently to form a top layer.

Bake the kunafa roll in the preheated oven for about 25-30 minutes, or until the kunafa turns golden brown and crispy.

While the kunafa is baking, prepare the sugar syrup. In a small saucepan, combine the sugar, water, lemon juice, and rose water or orange blossom water. Bring the mixture to a boil over medium heat, stirring occasionally. Reduce the heat and let it simmer for 5 minutes. Remove from heat and set aside to cool.

Once the kunafa is baked, remove it from the oven and pour the sugar syrup over it, ensuring that it is evenly soaked. Allow the kunafa to cool and absorb the syrup for about 10-15 minutes.

Carefully roll the kunafa from one end to the other, forming a cylindrical shape. Transfer the kunafa roll to a serving platter.

Slice the kunafa roll into individual servings and serve warm or at room temperature.
